On hydrolysis, sucrose gives an equimolar mixture of glucose and fructose.

Here, the configuration of sucrose changes (gets inverted) after hydrolysis, thus its hydrolysis is called inversion.

Glucose and fructose both of them does not undergo hydrolysis and both of them are monosaccharides. Glucose has aldehyde group, it reduces Tollen's reagent to silver mirror. Fructose has ketonic group, it does not form silver mirror with Tollen's reagent.
